With all due respect to the experts, and knowing that I am going to leave out many and that this is simply a brief overview, I will try. We start with our favorite typical dishes of Rome and then add some of the best known ones.

The most iconic dishes of Roman cuisine , many of which are famous throughout the world, are pasta dishes, but there are also recipes based on offal. The latter have not crossed borders for the most part and have remained more for the locals.

Did you know that…?
In Rome, offal was called quinto quarto . It was the extra part, the “fifth quarter”, that was left over from animals for the poor after selling the noblest parts to the rich. Another proof of the humble origins of Roman cuisine.

Did you know that…?
A couple of “linguistic” curiosities. First, the word supplì comes from the French surprise , because of the surprise that the filling causes when you bite into it. Second, supplì alla romana is also known as supplì al telefono , because of the mozzarella thread that forms when you open it and that reminds you of a telephone cord. Well, when telephones had cords…

Spaghetti carbonara
Spaghetti carbonara is the most international dish of Roman cuisine and one of the most mistreated abroad, where its recipe has been distorted to unsuspected limits. In short, it almost never has anything to do with the original… Yes, I’m sorry, Spaniards, carbonara doesn’t have cream! No bacon, no mushrooms, no grated cheese imitating Parmigiano, no strange spices. The ingredients of the sauce are, quite simply: beaten and raw eggs – some say only the yolk, others the whole egg – guanciale – cured pork cheek with black pepper – pecorino romano – cured sheep’s cheese from the area – and pepper. Simple, but exquisite.
